I must be out of my mind!

I can't believe I'm actually doing this!  It seems like everyone and their dog has a blog these days, and I didn't want to do something just because it was popular.  That infamous phrase has come to mind more than once when I've considered blogging, "well if everyone was jumping off a cliff..." but here I go, taking the leap!

I don't have any grand theme - other than the fact that I really do enjoy cooking.  And by cooking, I mean "what can be thrown together in 30 minutes or less" since I work full time, have two children and an astounding amount of laundry that gosh-darn-it just won't do itself!!!  

I have my husband mostly to thank for my passion for cooking.  He loves food and more than that he LOVES that he's not cooking it!  He has encouraged, inspired and cheered me on and really made every meal a pleasure for me to prepare.  I look forward to his comments and appreciation every day knowing it will start from his first sniff in the air upon walking into the house to his last "mmmm mmmm mmmm" (think What About Bob) bite. If you know anything about love languages, Dave is an acts of service, and I'm a words of affirmation; so he loves that I cook for him, and I love that he raves about it... and it's a win-win.

I'm not a gourmet chef... not even close - but sitting around my dinner table and hearing my 3-year old say, "Mmmmm, this is so dee-wicious" is more than enough to make me feel like a top chef!

That being said, let me share one of my favorite "quickie" recipes that is a big request among family and friends.

* Disclaimer - I don't really measure, I eyeball - so use your imagination and/or best judgment on my approximations.

AVOCADO CORN SALSA
2 1/2  cups of whole kernel corn.  (or 2 cans if you don't have fresh or frozen)
1/2 red onion, diced
1 can black beans, drained & rinsed
Cilantro... a good size handful
4 roma tomatoes, diced (or 2 medium size)
4 avocados, chopped
2 tbsp lemon or lime juice

Mix all ingredients together and season with salt, garlic powder, chili powder to taste.

Serve with tortilla chips!  Great with tacos too!

  4. Yipee my friend...who is giving Rachel Ray some stiff competition! So glad I now have no excuses for not knowing what to make for dinner!

    and the first post was removed because at 11:51 pm, all typed words look correctly spelled! how embarrassing. is automatic spell check to much to ask for?

    1. I know you've retired you blog...but I thought you'd like to know that I miss it.
      I miss the snippets about your kids. And, I didn't realize how much I appreciated your recipes until I find them and print them for the third time.

      Here's rooting for one a week,,,,Maybe?!?!
